Green Goodness Banana Muffins

This is another amazing way to use our organic Coconut Greens Superfood Powder in the colder weather to supercharge a classic banana muffin. I call them my Green Superfood Banana Muffins. They're paleo-friendly, grain free, gluten free, and utterly delicious!

Time to make 

10 minutes prep, 20 minutes bake

Ingredients

2 medium ripe bananas

4 free range eggs

1/4 cup melted coconut oil

1 level scoop coconut greens

1/2 cup coconut flour sifted (you can substitute for gluten free organic flour)

1/2 tsp bi-card soda

A pinch of salt

1 1/2 tsp organic vanilla bean paste (can use extract)

2 tsp ground cinnamon

Optional: you can also add 2 tbs honey or rice malt syrup

1/4 cup chia seeds

handful walnuts crushed lightly for topping 

Method

Preheat oven to 180 degrees (350F)  and grease 12 cup muffin tin 

Mash bananas in bowl (or you can use a blender) Add eggs, melted coconut oil and vanilla paste (honey/ rice malt syrup can be added) blend for  45 seconds 

Add all dry ingredients to wet and blend again for 45 seconds

Spoon batter evenly into each cup 

Sprinkle walnuts on each top

Bake for 20-25 minutes and allow to cool.

Our tip you can also refrigerate or freeze for lunch boxes, they won’t even know they are eating kale, broccoli and all those extra greens…

Serve warm with some coconut yoghurt or butter in front of fire yum!
